I have a ton installed but I started with these:

And also added a lot of extra quests and items. Very much added to the game. I think OOO (http://jorgeoscuro.googlepages.com/oscuro'soblivionoverloaddownloads) and OBSE (http://obse.silverlock.org/) are both must-haves.
